How one iconic dish became central to Luby’s Texas legacy

There are few things as quintessentially Texan as Luby’s Cafeteria. Founded in San Antonio in 1947, the eatery nearly shuttered all its locations across the Lone Star State until Calvin Gin stepped in to save the day.
